Free-from Almond Muffins

300ml full fat coconut milk (from a tin) 2 eggs 4 tbsp honey 1 vanilla pod (scraped) or 1 tsp vanilla paste 300g ground almonds Ā½ tsp bicarbonate of soda 1 pinch sea salt 100g blackberries or other berries (optional)
Mix the coconut milk, eggs, honey and vanilla in a bowl. Add the remaining ingredients and mix. Pour the mixture into muffin holders (only fill them two thirds full as they will rise) Bake the muffins in the oven for 20 minutes at 180 degrees Celcius until golden on top.

Chicken, sweet potato & coconut curry

Serve it with basmati rice or noodles of your choice. The red split lentils go mushy and make for a thicker, creamier sauce.
