Indian chicken curry with brown basmati rice & poppadoms

Freshly prepared quick and colourful Indian style curry. Perfect for making after an evening beach stroll.

Whose recipe is this?

Curry paste: ginger, fresh chilli, garlic, cumin, coriander, garam marsala, crushed cardamon, turmeric
2 chicken breasts (chopped)
2 onions
Runner beans
Organic coconut milk
Brown basmati rice
Poppadoms (optional)

Fry the onions to translucency
Add the freshly made curry paste
Add chopped chicken, then coconut milk gradually
Then after 5 minutes, the beans
Add the tomatoes

Serve with basmati brown rice and optional poppadoms.

Chicken, sweet potato & coconut curry

This is enough for dinner for 3-4 people, is quick to prepare and looks after itself in the oven.
Serve it with basmati rice or noodles of your choice. The red split lentils go mushy and make for a thicker, creamier sauce.
