Smashed avocado with tomatoes and basil on sourdough

Whose recipe is this?

Avocado
Sourdough bread
Baby plum tomatoes
Fresh basil
Himalyan salt
Freshly ground black pepper

Toast a slice of sourdough bread
Mash the avocado and spread it evenly onto the slice of toast
Chop the baby plum tomatoes and basil and add as a topping
Sprinkle with a twist of salt and black pepper

This is enough for dinner for 3-4 people, is quick to prepare and looks after itself in the oven.
Serve it with basmati rice or noodles of your choice. The red split lentils go mushy and make for a thicker, creamier sauce.

Caramelised Onion Sauce
